Raúl Bernal wins the contest for Best Artisan Bonbon of Spain
2023 has started off sweet for Raúl Bernal and LAPACA. And it’s because one of his bonbons, made with lemon, yuzu and hazelnut, has recently been chosen as the winner of the 2023 Best Artisan Bonbon Award in Spain in the final held on January 27 in Sant Cugat (Barcelona).
The first edition of this new contest, powered by DPAS and Books For Chefs, has been a "resounding success" according to the organisation, with more than 100 participating establishments, of which 33 went to the grand final, and a great general level in the proposals submitted.
The confection had to have chocolate as its main protagonist, both on the outside and in the filling. In addition, the interior had to be made up of at least two textures. The jury, made up of great pastry and chocolate figures such as Yann Duytsche, Saray Ruiz, Marike Van Beurden, Miguel Moreno and David Gil, carefully assessed aspects such as flavour, texture and presentation, as well as originality.
The proposal created by Raúl Bernal was made with a lemon, yuzu and hazelnut base in different textures and inside it included components such as gel, biscuit, praline and ganache. Ramón Morató, president of the jury and creative director of Cacao Barry, described it as “an incredible and addictive explosion of citrus, with an impeccable and fine finish”.
The LAPACA chocolate (Huesca) obtained a score of 492 points, followed by the Le Llamber Manin Sucre pastry shop in Cangas de Narcea (Asturias), with 491.5 points, and the Exalta Chocolates chocolate shop in Reus (Tarragona), with a total of 484.5 points.
