Together with our chef Albert Daví, we travelled to the Japanese capital where everyone had an incredibly enriching experience. We attended his masterclass at the Chocolate Academy in Tokyo with local chef Kohei Ogata, visited some of the best pastry shops in Tokyo, such as Maison Givree and Acacier, to learn about the tastes of Japanese consumers, and immersed ourselves in the exciting Japanese culture for a few days that were unforgettable for the whole team.
A unique experience that will surely inspire our chef in his next creations.
