Raúl Bernal, Best Artisan Chocolate Maker Master in Spain
If the Best Artisan Chocolate Maker Master in Spain (MMACE) competition were a cycling race, we could say that Raúl Bernal has worn the "yellow jersey" of the master chocolatiers. Winning this prestigious title is one of the highest accolades for professional chocolatiers.
Inspired by one of his great passions, cycling, and more specifically by the Quebrantahuesos, the mythical cycling race held in Huesca, his repertoire of products surprised the members of the professional jury, made up of Josep Maria Ribé, Alejandro Montes, Pablo Iglesias, David Bertrán and Carles Mampel, both in the presentation and in the tasting.
During the competition, held in Valencia, the finalists had to make three different types of bonbons, a bar, a snack and a chocolate figure. In most of his creations, Raúl used Chocovic's 30.3% Nacar white chocolate, a very versatile chocolate, suitable for mouldings and fillings, which allows him to better balance the flavours and highlight the flavour notes of the other ingredients.
After three hard months of preparation, with training sessions in the LA PACA workshop that lasted until the early hours of the morning, the result has been worth it: Raúl has worn the "jersey" of the Best Master Artisan Chocolate Maker in Spain thanks to the union of his two great passions: chocolate and cycling.
