    tomato juice

    Freshly squeezed lime juice
  • 1cl
    Veggie sour foamer
  • 1teaspoon(s)
    Bottarga
  • 1pinch
    Paprika powder
  • 1tablespoon(s)
    extra virgin olive oil
  • 3cl
    Van Houten Ground Dark Chocolate ganache
  • 1pinch
    celery salt

1. Cool the glass with ice.

2. Mix the vodka, tomato juice, lime juice, paprika powder, Bottarga and sour foamer.

3. Add the olive oil and mix with a mixer for a few seconds.

4. Add the ganache by using the throwing technique.

5. Change the ice in the glass, and dirty the inside of the glass with a brush of the tomato sauce. Sprinkle a pinch of paprika and celery salt over the strip of tomato sauce. Pour the cocktail into the glass.

6. Serve with some umami-tomato parts.

Tomatoes covered with Van Houten Ground Chocolate

    Tomato

1. Cut the tomato in 4 or 8 parts.

2. Cover half of the tomato parts with Van Houten Ground Chocolate.

Van Houten Ground Dark Chocolate ganache

ingredients preparation
  • 100g
    VM-54627-V99
  • 50ml
    Hot water (93-96°C)

1. Pour the hot water in a plastic bowl.

2. Add Van Houten Ground Dark Chocolate and stir gently.

3. Cover the bowl and store in fridge for 12 hours.

4. Take out of the fridge 30-60 minutes before use.

5. Blend with a spatula.

7. Pour into a squeeze bottle and use!
