Our History

In 1924, Carl Peckler, a talented baker hailing from Austria, embarked on a journey to create old-world baking ingredients tailored for the American palate. Arriving in Brooklyn, NY with a vision and a wealth of baking knowledge, he focused on small-batch production and the finest ingredients. Carl crafted almond paste, marzipan, fruit fillings, and flavorful spreads that quickly gained a loyal following.

What started as a local endeavor soon blossomed into a thriving business. The dedication to quality that Carl instilled in American Almond remains a cornerstone of our operations today. His entrepreneurial spirit and love for nut-based products laid the foundation for what would become a century of innovation.

In June 2015, American Almond joined the Barry Callebaut company, the heart and engine for the global chocolate and cocoa industry. This partnership has not only enhanced capabilities but has also enabled to maintain the highest quality assurance and safety standards in the facility in Pennsauken, New Jersey.

ALMOND PASTE is characterized as having a sweet and balanced almond flavor. American Almond brand Almond Paste is prepared from select grades of almonds grown in California. After blanching, the almonds are ground and then cooked with pure granulated cane sugar to a smooth paste.

KERNEL PASTE is made from apricot kernels. Inside the pit of an apricot is a “kernel” that has a distinctive almond-like flavor. Benzaldehyde is the naturally-occurring flavor component that we all identify as “almond,” and apricot kernels contain a lot of it. The apricot pits are shelled to yield their kernels. American Almond blanches the kernels to remove their skins, grind them and then cook them with pure cane sugar to complete the process. The finished product has a slightly stronger bitter almond flavor.
