    Vodka
  • 12cl
    Tomato juice
  • 2cl
    Freshly squeezed lime juice
  • 1cl
    Veggie sour foamer
  • 1teaspoon(s)
    Bottarga
  • 1pinch
    Paprika powder
  • 1tablespoon(s)
    Extra virgin olive oil
  • 3cl
    Van Houten Ground Dark Chocolate ganache
  • 1pinch
    Celery salt

Preparation Tomatoes covered with Van Houten Ground Chocolate:

Step 1: Cut the tomato in 4 or 8 parts.
Step 2: Cover half of the tomato parts with Van Houten Ground Chocolate.

 

Preparation:

Step 1: Cool the glass with ice.
Step 2: Mix the vodka, tomato juice, lime juice, paprika powder, Bottarga and sour foamer.
Step 3: Add the olive oil and mix with a mixer for a few seconds.
Step 4: Add the ganache by using the throwing technique.
Step 5: Change the ice in the glass, and dirty the inside of the glass with a brush of the tomato sauce. Sprinkle a pinch of paprika and celery salt over the strip of tomato sauce. Pour the cocktail into the glass.
Step 6: Serve with some umami-tomato parts.
